20 Minute Dinner

I am all about using leftovers to make a quick dinner. Last night Clay and I threw these bowls together literally just out of leftover ingredients we had sitting around in our fridge. It was delicious and nutrient packed. It also didn’t take a million years to make. Therefore this recipe made the blog.

Ingredients

  • White rice

  • Chickpeas

  • Black beans

  • Corn

  • Carrots

  • Avocados

  • Red onion

  • Cucumber

  • Slivered almonds

  • Cilantro

Instructions

  1. Make white rice.

  2. Heat beans, chick peas, and corn.

  3. Chop cucumbers, carrots, and avocados up.

  4. Combine all ingredients in a bowl. Diary lovers top with cheese if desired.
