20 Minute Dinner
I am all about using leftovers to make a quick dinner. Last night Clay and I threw these bowls together literally just out of leftover ingredients we had sitting around in our fridge. It was delicious and nutrient packed. It also didn’t take a million years to make. Therefore this recipe made the blog.
Ingredients
White rice
Chickpeas
Black beans
Corn
Carrots
Avocados
Red onion
Cucumber
Slivered almonds
Cilantro
Instructions
Make white rice.
Heat beans, chick peas, and corn.
Chop cucumbers, carrots, and avocados up.
Combine all ingredients in a bowl. Diary lovers top with cheese if desired.
