Go-to Salsa Recipe

I have always loved spicy food. Salsa is one of my all time favorite snacks. It can be a great salad topper. It can add an extra zing on baked sweet potatoes. Or you can make a big batch of it and take it to a party with chips! Here’s my recipe. I like it spicy! Adjust as needed.

Ingredients
*2 large ripe tomatoes (seeded & diced)
*1/2 white onion (diced)
*1/2 red onion (diced)
*2 fresh jalapeño peppers (seeded)
*1/4 cup fresh cilantro leaves
*2 chipotle peppers in adobe sauce
*Juice of 3 limes
*Dash of cumin
*Dash of chipotle powder

Instructions
1. Place ingredients in a food processor or blender and pulse to desired consistency. Taste and add more lime juice/spice, if needed.
2. Chill in the fridge for at least an hour prior to serving.

Tip: Stir in some extra onion and tomato chunks after your salsa is blended to give it some added texture.
