Simple Greek & Sunshine
For dinner tonight we whipped up our version of some yummy greek food and enjoyed the beautiful weather we are having here in Portland. Summer is awesome because it is so easy to find such beautiful local veggies to incorporate into your meals. I love when you look down at your plate and it has a whole rainbow of colors on it. After dinner tonight Clay said he loved eating healthy meals like our dinner because it made him feel full and nourished without feeling weighed down. Can you relate? Healthy meals seem to have that affect, where they fill you up without stuffing you.
Our dinner tonight had a lot of ingredients in it but the overall theme that we went with was kind of greekish. Here are the ingredients broken down:
Ingredients
1 whole wheat pita
1 chicken breast (cubed)
1 cup brown rice
1/2 cup black beans
1/2 cup chickpeas
1 tbsp white onion (diced)
1 tbsp minced garlic
1 tsp olive oil
1/2 cup carrots (sliced)
1/2 cup cucumbers (sliced)
1/2 avocado (sliced)
lettuce
kale
Instructions
Salute cooked brown rice, onion, garlic, and olive oil in pan.
Toss black beans and chickpeas into rice mixture.
Cut chicken into cubes. Grill 3-5 minutes each side.
Grill pita on skillet. Cut into slices.
Cut up veggies.
Plate. Mix all together and enjoy!
Food is fuel. Take advantage of the amazing summer vegetables and start incorporating them into your meals. This “greekish” meal was super easy to make and fueled the runner boy with nutritious ingredients. Also super easy to make it vegan for mwah. Win win for greek night.
