Keep it Simple Stupid

So often when I am thinking about what to make for dinner I stress about making sure I have all of the best ingredients and that the balance is just right. Anyone that knows me knows that I am OCD to the tee and to say that I should just relax and not plan ahead is almost a laughable thought in my head. But when it comes to cooking sometimes you have to follow the wise words of Michael Scott from The Office when he tells Dwight “Keep it Simple Stupid.”

Whipping up dinner can so quickly turn into a tornado at our house. Sometimes I will look at the pile of dishes in the sink and tons of ingredients overflowing on the counter and just feel overwhelmed. But the beautiful thing about cooking is that it doesn’t always demand hours of our time. Sometimes our healthy dinners can come in the form of few ingredients and take very little time to prepare. Last night was a perfect example of this paradox. Clay and I had just worked long days and we just wanted to make an easy dinner that was filling, healthy, but not time consuming.

From start to finish it was about 35 minutes total. Now keep in mind, the 35 minutes were not spent slaving over a stove. I managed to work on my blog, watch some netflix, play with Jerry, talk with Clay, change into sweats, put some laundry in the washer, all while I was monitoring the food cooking. Cooking doesn’t have to be a burden. Sometimes you aren’t in the mood to cook and that is 100% alright! Make your life easy and assemble a three ingredient meal, that requires so little effort its almost comical. Boom, easy peasy, healthy, filling, dinner.

Ingredients

  • 1 boneless skinless chicken breast

  • 2 tbsps olive oil

  • Dash of garlic salt

  • Asparagus (Or whatever veggie you want)

  • 2 cups white rice (Or whatever grain you want)

Instructions

  1. Preheat oven to 400

  2. Cook rice in rice cooker.

  3. Put chicken breast on baking sheet and drizzle with olive oil and garlic salt. Bake for 30 minutes.

  4. Saute asparagus in pan with 1 tbsp of olive oil. Medium-high heat. About 5-10 minutes.

  5. Plate. Eat. Enjoy. Boom.

Clay likes to sprinkle a little parmesan cheese on his asparagus. He also likes his chicken cut up so he can mix it with his rice. This meal is so easy to make and it is so delicious! We will mix it up and do quinoa, couscous, broccoli, corn on the cob, etc. Whatever you have on hand, toss it together, keep it healthy, and “keep it simple stupid.”
