Sauced

I am 100% a sauce person. I love all sorts of dressings, dips, spreads, etc. Dry food is the worst. Clay actually prefers his food dry. Like turkey sandwich with nothing on it, plain rice, dry rice cake level dry. But that is not me. When I make salads at home I usually make a dressing to go along with it. I love making my own salsa, pico, hummus, and most spreads. I've tried finding dressing brands that are store bought but haven't found any that measure up in taste or quality of ingredients. Making your own stuff from scratch takes so little time and can be done in big batches. Not to mention that store bought dressings are usually packed with added sugars and preservatives to give them a longer shelf life. Gross, no thanks.

On Sunday I usually make a batch of two of three dressings that I will use throughout the week. I store them in mason jars or put them in small containers to take to lunch with me. It takes so little time, tastes 1,000 times better, and is sooooooo much healthier. This week I have been living off of meal prepped bowls and quickly thrown together salads. Having my dressings prepped ahead of time has made my life so much easier and vastly more delicious!

This week I whipped up these two dressings:

Cilantro Avocado Lime Dressing

Ingredients

  • 1 avocado

  • 1 cup fresh cilantro

  • 1 lime juiced

  • 2 Tbsp olive oil

  • 1/4 tsp salt

  • 1 clove garlic

  • 1/8 cup diced onion

  • 1/3 cup water (more as needed)

Instructions

  1. Put all of the ingredients in a food processor or blender to combine.

  2. Add more water for a thinner consistency.

Tip: These flavor combinations go great on top of Mexican themed bowls and all types of salads.

 

Dijon Vinaigrette

Ingredients

  • 1 lemon juiced

  • 1 Tbsp apple cider vinegar

  • 2 Tbsp honey (sub maple syrup for vegan)

  • 2 Tbsp dijon mustard

  • 1 tsp minced garlic

  • 1/4 tsp salt

  • 1/4 cup olive oil

Instructions

  1. Put all of the ingredients in a food processor or blender to combine.

Tip: This is my go-to dressing for Greek themed meals and weekly pre-prepped lunch salads.
