Summer = Grilling

When I think of summer time, I think of sunshine, BBQ’s, good company, and water gun fights. This summer Clay and I have enjoyed the bounty of fresh, seasonal, organic foods through grilling. We have come to discover that you can literally grill anything and it will taste amazing. When I was growing up I viewed grilling as a singular means of cooking hamburgers, hot dogs, and occasionally chicken. Like most of middle America, i had no idea how much possibility existed in the world of grilling, smoking and open fire roasting. After the summer of 2020 my eyes have been opened and I am enlightened.

ATTENTION FOLKS!!!!!!!!!!!! You can literally grill anything. Yep, that is typed correctly. You can grill anything! From different types of meat or fish, to all of the vegetables of the rainbow. Toss it on and enjoy! I am constantly encouraging people to simply get creative with their food. Step outside of their comfort zone and mix things up. Maybe the next time you grill you throw some zucchini slices on next to your cheeseburgers. If you don’t like it or its a cooking fail, SO WHAT. Cooking is a terrain that is meant to be explored. Here are a few meals Clay and I have cooked up on the grill this summer and loved!

  • Veggie kabobs (filled with whatever seasonal veggies we had in our fridge)

  • Grilled chicken tacos

  • Whole, stuffed, and roasted peppers

  • Whole eggplant (turned into baba ganoush)

  • Charcoal roasted homemade tortillas

  • Hawaiian BBQ chicken skewers

  • Corn

  • Whole cauliflower

  • Greek marinade rubbed chicken

  • Seasoned tomatoes
