Wild Rice Bowl

Bowls on bowls on bowls on bowls. Don’t worry mom I am not going to start a new religion where I preach about bowl making. But believe me y’all I could sure testify that making bowls for dinner is the best way to go. Runner boy and I are actual crack addicts because making bowls is super easy, delicious, and there are like a million different combinations. This week we got a little crazy and added some wild rice to our bowl as our grain. Wild rice is is low in calories but high in nutrients like protein, magnesium, fiber. Per usual we added a random and in no way planned array of veggies. Then the easiest go-to chicken in the world for Clay. I always modify my bowl as needed. Here is what we tossed in this week:

Ingredients

  • 1 large boneless skinless chicken breast

  • 1 tbsp olive oil

  • dash garlic salt

  • 2 cups wild rice

  • 2 cups broccoli

  • 1 cup kidney beans

  • 1 cucumber

  • 1/2 avocado

  • lettuce and kale

Instructions

  1. Preheat oven to 400

  2. Cook wild rice in rice cooker.

  3. Put chicken breast on a lightly greased pan. Drizzle olive oil and garlic salt.

  4. Put breast in oven and bake for 30 minutes.

  5. Steam broccoli.

  6. . Remove chicken from oven. Cut as desired.

  7. Build your bowl. Start by putting your rice on the bottom and then adding desired toppings.
